The Cardinal Rule of Baking

Before mixing ingredients, make sure each ingredient has been brought to room temperature.

Basically, take out the refrigerated ingredients about half an hour before you start mixing them together. It not only makes mixing easier and smoother, but it ensures that the dish bakes evenly in the oven. If everything is the same temperature going in, it’ll be the same temperature coming out. Its amazing the difference between cookies with softened butter and butter straight from the fridge!

This rule applies to cheeses for pasta dishes, eggs for cookies, milk for cakes, everything! You’ll notice an improvement in your baking, I promise!
